How to get your man to eat his vegetables

Herbs and spices could go a long way in convincing men to eat their vegetables.

Seasoning could help adults eat their vegetables, scientists form the University of Illinois say. They conducted a study in a coffee shop that showed how much difference seasoning makes when offering up steamed vegetables. Clients that didn’t regularly consume vegetables, preferred the spicy treats while those that usually eat their greens, were more inclined to like the regular ones.

And men, under 50 years old, were much more likely to choose the seasoned vegetables, the results pointed out.

“Herbs and spices may make vegetables more tempting for men and younger adults – who tend to eat fewer plant-based foods overall than do women and older adults, Joanna Manero, a graduate student in food science and human nutrition said.

And scientists argue that this is the exact category of consumers that ads should be targeting when talking about including more vegetables into the daily diet.

“Getting people to go from zero to even one serving is a big step forward in moving people to include vegetables in their daily diet,” said food science and human nutrition professor Karen Chapman-Novakofski, a co-author of the paper. “If you’re already eating vegetables at dinner, then perhaps that’s not the place we need to make that nutritional nudge.”

The study also revealed something else.  While diners indicated that they liked carrots, green beans or broccoli somewhat or very much, whether seasoned or not, when measuring the waste after the meals, the scientists found that wasted twice as much of the seasoned carrots as green beans and three times more carrots than seasoned broccoli, even though they reported they liked carrots about as much as the other two vegetables. According to the scientists, this could be a by-effect of seasoning carrots with cinnamon.
